If you're looking for a rich, nourishing meal that highlights the incredible flavor of locally raised beef shank bones, this slow-braised beef shank recipe is a must-try. Using simple ingredients and a low-and-slow cooking method, you’ll unlock deep flavors and tender, fall-off-the-bone meat, perfect for a cozy dinner.

Ingredients:

  • 2-3 locally raised beef shank bones (with meat attached)

  • 2 tbsp olive oil

  • 1 large onion, chopped

  • 3 cloves garlic, minced

  • 2 carrots, chopped

  • 2 celery stalks, chopped

  • 2 cups beef broth (preferably homemade from local bones)

  • 1 cup dry red wine (or additional broth)

  • 1 can (14.5 oz) diced tomatoes

  • 1 sprig fresh rosemary

  • 2 sprigs fresh thyme

  • 2 bay leaves

  • Salt and pepper to taste

  • 1 tbsp tomato paste

  • 1 tsp smoked paprika (optional)

  • 1 tbsp balsamic vinegar (for finishing)

Instructions:

  1. Prepare the Beef Shank: Pat the beef shanks dry with a paper towel and season generously with salt and pepper.

  2. Sear the Meat: In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat. Sear the beef shanks on all sides until golden brown, about 3-4 minutes per side. Remove and set aside.

  3. Sauté Aromatics: In the same pot, add the onion, carrots, and celery. Sauté for about 5 minutes until softened. Add the garlic and tomato paste, stirring for another minute.

  4. Deglaze: Pour in the red wine (or extra broth) to deglaze the pan, scraping up any browned bits from the bottom.

  5. Slow Cook: Return the beef shanks to the pot and add the beef broth, diced tomatoes, rosemary, thyme, bay leaves, and smoked paprika if using. Bring to a gentle simmer.

  6. Braise: Cover the pot and transfer to a preheated 300°F oven. Braise for 3-4 hours, turning the shanks occasionally, until the meat is tender and easily pulls away from the bone.

  7. Finish & Serve: Remove the bay leaves and herb sprigs. Stir in the balsamic vinegar for a hint of acidity. Serve over mashed potatoes, polenta, or crusty bread, spooning the rich sauce over the top.
